Mandarin Lettuce Salad

1/2 cup sliced almonds
2 teaspoons sugar

2 bags of salad (each bag should serve 4-6 people)
3 stalks celery, chopped
1 bunch of green onions, sliced
2 cans of mandarin oranges, drained

Dressing:
1/4 cup oil
2 Tablespoons sugar
2 Tablespoons vinegar
1 Tablespoon parsley
1/2 teaspoon salt
Dash of pepper

Melt sugar in saucepan, place almonds in saucepan to coat in melted sugar. Remove almonds and cool on wax paper.

Mix dressing ingredients together. Once the almonds are cool, combine remaining salad ingredients in a large salad bowl and toss in dressing.

*For salad, I generally use hearts of romaine or mixed baby greens.
