Hot Chicken Salad
2 cups cubed cooked chicken
2 cups thinly sliced celery
2 cups croutons
1 cup mayonnaise
1/2 cup chopped or slivered almonds (toasted)
2 Tablespoons lemon juice
1/2 teaspoon salt
1/2 cup shredded cheddar cheese
2 teaspoons instant minced onion
Heat oven to 450 degrees. Mix all ingredients except 1 cup of croutons and the cheese. Spoon into 6 1-cup baking dishes or a casserole dish. Sprinkle with remaining croutons and cheese. Bake 10-15 minutes or until bubbly. *If cooked in a casserole dish it will take longer to heat through.
