Peach Poppy Seed Muffins
1/2 cup plus 2 Tablespoons butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract
1-1/4 cups flour
2 Tablespoons poppy seeds
1 teaspoon baking soda
1/4 teaspoon salt
1 jar (6 ounces) peach baby food
In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the flour, poppy seeds, baking soda and salt; add to creamed mixture alternately with baby food. Fill paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20-25 minutes or until muffins test done.
