Mandarin Orange Cake
1 yellow cake mix
1 cup oil
4 eggs
1 small can mandarin oranges with juice
Topping:
3 ounce box instant vanilla pudding mix
20 ounce can crushed pineapple with juice
18 ounce container of Cool Whip
For cake combine the cake mix, oil, eggs, and mandarin oranges with juice. Pour into a greased 9X13 inch pan. Bake at 350 degrees for 35 minutes or until cake is done. Mix pudding and pineapple with juice, fold in Cool Whip. Spread on cooled cake and refrigerate. Note this cake keeps well. 1 cup of applesauce can be substituted for oil to reduce fat content.
