Peaches and Cream Pie
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 small box regular vanilla pudding
3 Tablespoons margarine, softened
1 egg
1/2 cup milk
Mix ingredients and blend 2 minutes on medium speed of an electric mixer. Pour into a greased 10 inch glass pie pan. 1 large can of cling sliced peaches (20 ounces); drain and save 3 Tablespoons of the peach juice. Place peaches on top of the mixture in the pie plate.
Combine the following in a small bowl:
8 ounces cream cheese, softened
1/2 cup sugar
3 Tablespoons reserved peach juice
Beat these ingredients for 2 minutes with an electric mixer on medium speed. Then spoon on the mixture in the pie plate and work to 1 inch of the edge of the pie plate.
Combine the following ingredients and sprinkle on cream cheese mixture:
1 Tablespoon sugar
1 teaspoon cinnamon (I use more)
Bake at 350 degree oven for 1 hour or until tested done. Refrigerate once cooled.
