Pickled Beets
2 cans of sliced beets
1 cup vinegar
1 cup of beet juice (reserved from cans)
1-1/4 cups sugar
Heat vinegar, sugar, and beet juice. Boil ingredients until sugar dissolves. Add sliced beets and simmer, uncovered, on low heat. Refrigerate pickles for up to one month.
